Rosemary Carrots

As we near the end of the season this weekend is a classic grilling time. Nothing about a good cookout should be difficult. That makes these rosemary carrots the best! They don’t even need a dish. You can make these even more beautiful by searching out multi-colored carrots. This make them look fancy but doesn’t change how easy they are! Go shop your farmers market or local co-op. Get produce as close to home as possible. As we hear about recall after recall on our food products the closer to home, the smaller the farm, the less likely you will be to having food you have to throw away.

Let’s get to it!

Ingredients:

Organic Carrots (local if you can get them)
Good quality olive oil
Rosemary
Salt
Pepper

Simply grab a large piece of heavy duty foil if you have it. If not double your foil to make is just a bit more durable. Cut up your carrots into sticks of similar size. Place them in the center of your foil and drizzle with olive oil, salt, and pepper. Toss them to coat and place a few sprigs of fresh rosemary on top. Seal up your foil to make a closed packet. Place it on the grill or in a 450º oven for about 15 minutes or until tender but still a bit crunchy. Serve right in the foil packet!
